Weekend is coming up and I have the best way for you to start it! Always wanted to make that instagram friendly toast ? Well I got the trick for you!
You need sourdough bread (or make your own, the sourdough starter will be done by Saturday and you can enjoy a fresh bread Sunday! Find my recipes on the website on how to do it!)
Avocado mix:
Mix everything according to your own liking
2 ripe avocados
Cilantro or parsley
Cherry tomatoes
1 clove of garlic
A few drops of tabasco
Fresh lime/lemon after taste
Sea salt
Black pepper
Smash the avocados smoothly with a fork. Finely chop your cilantro or parsley, tomatoes and garlic and add to the avocados. Taste off with lime, tabasco, salt and pepper.
Poached egg
Don't be scared to do this! I got the trick!
You need water, vinegar and fresh eggs!
1. Gently boil some water, about 95c so its simmering in a medium sized pot.
2. Add 1/2 a teaspoon of vinegar (this will bind the egg white together) and make a swirl in the water. Like a tornado!
3. Gently crack your egg into the swirling water for it to wrap around the egg yolk. You will probably loose some of the egg white around but that is fine, its normal!
4. leave It in for about 3 minutes before taking out.
Top of the avocado egg sandwich with some olive oil, pickled spring onions roasted sesame seeds and fresh herbs!
Pickled spring onions
1:1:2 method
Mix equally as much water, vinegar and double the sugar, bring to a boil without stirring and add the onions. Preserve in fridge.

100g water
100g vinegar
200g sugar
