I loooove this mud cake with some lightly whipped cream! It has a fairly low sugar content and its so simple to make!
Ingredients:
Butter 150g
Sugar 150g (1,5dl)
Vanilla sugar 1teaspoon
White flour 150g (2.5dl)
Eggs 2pc
Lemon zest + juice 1pc
Melt the butter on medium heat. Mix it with all the dry ingredients and add the eggs and mix together before adding the lemon juice and zest. Bake in a buttered form with adjustable edges in 165C for approx 15-20min. It should be a bit loose in the middle. Let rest until cool.
