BAKED CHEESECAKE

This cheesecake recipe works in a ring or in a tray lined with a rectangular ring around. Usually I am not too keen on cheesecake, I am a very big ice cream lover so I usually prefer a frozen cheesecake, but this one always works! Here comes a simple and easy baked cheesecake recipe for anyone to make.




1 tray or 2 big round cakes


Base

Digestive or shortcrust crackers with melted butter to combine. Press out as base.


Chessecake

Cream cheese 500g

Sugar 240g

Labneh or fullfat plain yoghurt 110g

Eggs 260g

Flour 70g


Mix cream cheese soft and add sugar and labneh/yoghurt. Fold in the flour and add the eggs.


Pour mixture over base and bake in 120C, no steam for approx 60min. Make sure it is not liquid in the middle.



Condiments:

Chantilly or whipped cream, citrus zest, fresh berries and agar. Recipe for vegan exotic agar and raspberry agar will be up soon.
