SPANISH CROQUETAS

This takes me to my home in Spain, in costa del sol where I just love to have these small bites! This recipe comes from my chef boyfriend Mattias and they are one of the best ones I've ever eaten!


Mixture for approx 20 round pc

400g Milk


100g flour

100g butter

1 onion yellow

200g manchego cheese (or other preferable)


STEP 1: Melt butter in a pot and sweat the finely chopped onions. Add the flour. Gently cook the flour until it starts evaporating and become a paste. Stir all the time with a wooden spoon or fork. Add the milk in steps until it becomes a batter/paste.

Add the grated cheese.

Optional: Some frozen spinach


STEP 2: Pipe on a tray and gently freeze until firm. Roll into balls.


Frying coat

Flour

Whole eggs, stirred

Breadcrumbs or panko


Roll the balls in flour and throw between hands to dust excess flour off.

Dip in egg and last in panko.


Deep-fry in neutral oil. (Sunflower, grapeseed etc.)
